Traditional Greek cuisine has four secrets: (1) Simplicity, (2) Unique and fresh ingredients, (3) The famous Greek olive oil and (4) The proper use of herbs and spices. Greek olive oil is almost presents in all Greek dishes, it deserves a special mention. You will be so delighted with the taste of Greek onions, garlic, parsley, lettuces, carrots and tomatoes plus the aroma and rich flavor of fresh fruit. From hearty stews, to warming soups and simple side dishes, traditional Greek food combines the freshest of ingredients from land and sea to create a highly appetizing and healthy cuisine. With a significant influence from the Turkish and Italian cuisine, the Greek cuisine is focused around olive oil, vegetables and herbs specific to the Mediterranean region. This style of serving food is less a part of family life than it is of entertaining and cafes. Mezze may be as simple as pickled vegetables or raw vegetables, hummus, baba ghanouj and bread, or it may become an entire meal consisting of grilled marinated seafood, skewered meats, a variety of cooked and raw salads and an arrangement of desserts. The Lebanese cuisine is the place where you can taste all the goodness the Middle East has to offer. Foods are generally Mediterranean, high on vegetables, little meat and full of flavors. |

Baklava At It's Best!
Baklava is probably the most famous of all Greek desserts and deservedly so. It has been around since ancient times. Little diamonds of crisp phyllo pastry, layered with a filling of walnuts and drenched in an aromatic honey syrup. Just the thought of it has my taste buds remembering the exquisite flavor.  Baklava is a Mediterranean dessert made with Phyllo dough, nuts, butter, and sugar. After baking to perfection, sweet syrup is immediately poured over the pieces allowing the syrup to be absorbed into the layers. Paired with a cup of Lebanease coffee, baklava is a perfect conclusion to a fabulous meal at Albasha's. The history of Baklava changed with the history of the land. The Near and Middle East saw many civilizations come and go. Baklava and the recipe had spread to the Near East, Armenia, and Turkey. With the advent of the Grecian Empire, it spread westward to Greece. Phyllo dough is named after the Greek word for "leaf", being "as thin as a leaf". The thickness (or for that matter, the thinness) of Phyllo gives baklava is delicious crispy taste. So, when some people eat a piece of baklava, they may want to think of Greece. However, the history of baklava reveals it came from farther East...
