Leave the Cooking, Cleaning, & Serving to the Professionals!
In the throes of extreme economic recession, going out for fine dining may appear like reckless extravagance. In the event you cook well & enjoy preparing luxurious meals for your relatives & friends, you may often prefer to perform the chef's duties yourself, apportioning the massive budget for better quality food—better grades of meat & finer fresh vegetables & fruits. You must admit, however, every now & then it feels nice to delegate the cooking, cleaning, & serving to professionals, letting them do the work & wait on you for a change. To relieve yourself of all guilt, giving yourself freedom to relax & enjoy a great meal, discover Portobello's Grill that offers menu items you never-in-a-million-years would prepare at home. A word from Chef Niko; I was interested in cooking as long as he could remember; my first exposure to exceptional food came from my Maw Maw Betty who you could say was my first inspiration. I still remember like it was yesterday helping her pick the fresh herbs from her garden. As a child she would teach me how to identify the various herbs by picking the leaves and crushing them in my fingers to release the potent aroma. She would always use fresh herbs in her cooking and you could tell, she would spend hours in the kitchen preparing the most delicious Italian and Cajun cuisine, the sauces, soups, gumbos and Italian specialties were incredible and made such an impression on me. She even baked the most delicious herb infused breads. I learned about the work and preparation it took to prepare a great meal from her. I learned so much from my Maw Maw Betty and others in my family because everyone cooked and I credit my Dad for teaching me all about wines.
I always knew that I would be cooking professionally one day. I had my first real kitchen job when I was sixteen working at The City Club of Baton Rouge; I worked for Chef Diane Mangiaforte and learned many of the basics, like cutting washing and prepping vegetables I also learned a lot about preparing, prepping, and setting up for banquet style parties, it was an in valuable education. After leaving The City Club I wanted to learn about pizza and Italian food so I got a job at DeAngelo’s. I worked for a few years and learned all about pizza and Italian food and before long I was doing everything in the kitchen, making pizza, calzones cooking all of their menu items. I was promoted to a shift leader and this is where I received my first formal training in restaurant management.
Jubans Restaurant was the next level in my assent to reaching my dream of one day running my own kitchen; this was the turning point in my culinary education, I started on the salad line, and moved up the ranks advancing my education by learning frying, grilling and then sauté. Jubans allowed me the freedom to create my own dishes through special menus. I learned so much about local ingredients and all the classic sauces, reductions and creating from scratch. I had the most incredible opportunity and culinary experience which was working under the greatest chef I know, executive Chef Terry P. McDonner who has taught me so much; I was promoted to Sous Chef and continued on at Jubans for several years. Fourteen years after starting my culinary education I find myself in the position of Executive Chef in one of the very finest restaurants in Baton Rouge, Portobello's Grill. I am very blessed and grateful to all who have inspired, encouraged, educated and have given me some remarkable opportunities.
My promise to all who visit our restaurant is this, the staff and I we will always strive to be the very best in keeping with very high standards set by the Guidroz family.
